A simple Christmas gift...Easy Peasy Almond Biscuits


Love these biscuits. Not overly sweet and great to have with a cuppa. I have been making this simple recipe with great success. It is so easy to make and it is ideal as a Christmas present, especially for your kid’s teachers.

Preparation time: 10 minutes

Cooking time: 1st stage 30 - 40 minutes, 2nd stage 45 minutes

Quantity: 12 bars

Ingredients

3 Egg whites, free range & organic is preferred

113.4g/4oz Organic castor sugar (replace with organic stevia if preferred)

113.4g/4oz Organic plain flour, sifted

113.4g/4oz Unblanched whole almonds

Recipe

  1. Line a loaf tin with grease-proof paper (eco-friendly of course).

  2. Beat egg whites until stiff.

  3. Gradually beat in the sugar to form a meringue consistency.

  4. Fold in the sifted flour and whole almonds and then pour into the lined loaf tin.

  5. Bake in a moderate oven for 30 – 40 mins. Leave in the loaf tin to completely cooled.

  6. Wrap in foil and refrigerate for 1 – 2 days. Using a very sharp knife cut into wafer tin slices.

  7. Place on a lined baking tray and cook to dry out on 130C for about 45mins.

  8. Cool on a wire rack before placing in your airtight container.

  9. Decorate the container when gifting.

Place in an airtight container and these will keep for a few weeks.
