Hope your week has been good to you. I know many of you have taken up the Plastic Free Challenge in July. How is it going? Have you learned a few things about your lifestyle? I know when we starting reducing the amount of plastic in our lives, we found it amazing how very hard it was to stop using plastic as it is so prevalent everywhere. It has become so much a part of how we live as a society, that we find it hard to break the habit.
I know it is not easy, because I still find the odd plastic bag or plastic bottle slipping through our hands. When you think of all the household appliances that contain plastic, it really makes you realise it is everywhere. It is so part of our daily lives. I think the hardest time to avoid plastic is when you are away from home. So don't beat yourself over it if you have to use plastic, but keep on persevering with the challenge beyond July because reducing our use of plastic is so important.
Now I'm cheating a bit this week as this is not a recipe I have created or made, but I will certainly will be giving it a go this weekend. Having a healthy diet aligns with living an earthly passionate life. Natural and organic wholesome food are not only good for us, but have little impact on the environment. I love the work at FMTV Food Matters. A great place to find healthy tips and advice, the most brilliant recipes and documentaries. As Rachel Morrow from Food Matters has said "Time to switch things up, get creative with food and take advantage of Mother Nature's finest ingredients! Try this raw, vegan peppermint slice with hidden greens." A treat that everyone will love.
Ingredients
Chocolate Base
½ cup almonds
2 tbsp melted coconut oil
½ cup Food Matters Superfood Chocolate
6 medjool dates
Process in until a sticky crumble forms.
Press into a lined dish.
Smooth and place in freezer.
Green Peppermint Layer
1 cup cashews (soaked overnight)
¼ cup coconut milk
1 tbsp Food Matters Superfood Greens
¼ cup shredded coconut
¼ cup coconut oil
1 drop of pure peppermint oil
Process until smooth.
Pour over base and smooth until even.
Place back in the freezer for 30 minutes.
Raw Choc Drizzle
2 tbsp coconut oil
1 tbsp pure maple syrup
2 tbsp Food Matters Chocolate
Whisk together until smooth.
Cut the slice into pieces and drizzle with chocolate drizzle.
