Looking for sometime to cook up this weekend that is quick and healthy (apart from the sauce). Well, I have a staple that is on our menu when the weather is warm and I don't want to spend too much time preparing food. Thanks to an old friend I got this recipe years agoand made it my own. A very simple dish that the kids love it.
Warm Chicken and Mango salad
Ingredients
200g-250g chicken strips per person
1 tbsp olive oil (or coconut oil)
Favourite seasoning (garlic salt, thai seasoning, etc)
Salad:
1 mango, peeled and sliced into strips
Cucumber, sliced
Tomatoes, sliced into segments
Spanish onion, sliced into rings.
Lettuce/Spinach/Kale (your favourite)
And any other vegetables you want in your salad.
Sauce:
¼ cup honey
½ teasp wholegrain mustard
½ cup mayonnaise
Serves: 4 people
Instructions
First prepare the salad by mixing the salad ingredients together in a bowl and then serve on the serving dishes.
Prepare the sauce by mixing the sauce ingredients together. Taste to determine if you want to add more honey or mustard or mayonnaise as per your taste requires. Place into the fridge until needed.
Dust your chicken with the seasoning of choice.
Heat the olive oil or coconut oil) in a large frying pan.
Fry the chicken until golden brown and cooked thoroughly.
Place on top of the salads.
Drizzle sauce over salad and serve immediately.
Note: Chicken may be kept warm in a warm oven if preparing a number of batches.
